I get 12 bits per colour channel from my Canon digital camera, but JPEGs truncates them to 8 bits. I'd love to be able to store the images in a 16 bit format, but TIFFs are just too bulky.

For really serious, dedicated photographers what makes most sense is to save your RAW files which are very large but have the advantage of preserving as much of the "pristine" least processed image as possible. Thus when new post-processing technology becomes available in the future you can benefit by re-processing your image to produce increasingly "better" photos in the future.

I have already benefited from using some of the improved methods in CS4 RAW to improve photos I had taken 4-5 yrs ago, so this is not just a theoretical "pipe dream".
