OK, the NI manual states that sharpness and contrast settings have an effect on noise, and indeed profile are available at different sharpness and contrast settings. Yet when I look at the EXIF profile I see nothing that indicates either, just a "compression" setting (so many BITS per pixel), which I don't understand.
Does NI automatically match sharpness and contrast settings if profiled? I have downloaded some profiles, and even though my camera is set to "soft" sharpness and "low" contrast the auto profile imports a "hard" profile, which doesn't sound right.

This is probably because the manufacturer of your camera has decided to go against the EXIF standard and put the information about sharpness and contrast in an inappropriate place. In principle, NI does not show all EXIF fields, so comparing it with a general EXIF reader is not very useful. Only those EXIF fields are shown by NI that (1) could be extracted from the input image and (2) are important for noise reduction.
